Abstract

Purpose

Low fruit and vegetable intake is associated with heart disease, some cancers, and other major causes of death. Product pricing influences food purchases and economic declines have affected food budgets; therefore, this study examined the nutritional quality of advertised meal deals and buy-one-get-one free (BOGO) offers at three major grocery store chains over ten weeks. The paper aims to discuss these issues.

Design/methodology/approach

USDA's SuperTracker and Diet Analysis Plus were used for nutritional analyses of advertised offers over a ten-week time period in Fall 2011.

Findings

Meal deal – ten-week averages per person: prices ranged from $1.25 to $5.00. Evaluation of MyPlate categories revealed the following percentage breakdown: empty calories – 57 percent, grains – 21 percent, protein – 12 percent, dairy – 8 percent, vegetables – 2 percent, and fruit – 0 percent. BOGO – ten-week averages: when examining MyPlate categories, nutritional quality was similar to meal deals in that few products were from the vegetable (12 percent) fruit (4 percent), and dairy (3 percent) groups.

Originality/value

Research is sparse regarding nutritional quality of advertised sales at grocery stories.

Abstract

In this chapter, we consider the lessons that may be learned from Historically Black Colleges and Universities (HBCUs) about how to promote degree attainment for African American women in STEM fields. Specifically, we examine the presence of African American women in the STEM fields, discuss the conventional wisdom on the preparation of STEM graduates, as well as the role that HBCUs play in promoting the success of African American women. We conclude with recommendations for improving the degree attainment of African American women in STEM fields.

Abstract

Purpose

The purpose of this study is to compare the oxidative stability of non‐hydrogenated cottonseed oil with that of the partially hydrogenated oils commonly used as a deep‐fat frying medium by the restaurant industry when used to prepare French fries in order to reduce trans‐fatty acids.

Design/methodology/approach

Stability characteristics of non‐hydrogenated cottonseed oil and two hydrogenated oils, canola and soybean, were evaluated in deep‐fat frying applications. French fries were analyzed for total polar compounds, and the oils were analyzed for iodine, peroxide, p‐anisidine and totox values, and free fatty acids.

Findings

Canola and soybean oil had significantly lower iodine values than cottonseed oil. Free fatty acid values were not significantly different among the oils (0.256 per cent oleic acid). Initially cottonseed oil had higher peroxide, p‐anisidine, and totox values compared with canola and soybean oil. However, as days of frying increased, values trended closer together. Total polar compounds were similar. All oil types were comparable in terms of their stability characteristics under the conditions used in this study.

Research limitations/implications

Research with additional food product and under more stressful conditions would be beneficial.

Practical implications

Hydrogenation increases trans‐fatty acid content. Consumption of trans‐fatty acids has been associated with increased risk of heart disease. Non‐hydrogenated cottonseed oil may be a viable alternative to popular hydrogenated oils currently used in the restaurant setting.

Originality/value

Restaurants are being pressured by health officials to choose healthier oil. This research article can help restaurants make an informed choice.

Abstract

The number of bachelor's degrees awarded to African-Americans in STEM fields has been increasing, but at a slower pace than the number of bachelor's degrees earned by blacks in other fields. Between 2000 and 2008, the number of bachelor's degrees awarded to African-Americans grew at a faster rate than the total number awarded to all students (27 percent versus 21 percent). However, the growth rate in the number of bachelor's degrees earned by African-Americans in STEM fields has been lower than the rate of growth of bachelor's degrees awarded in other fields. As mentioned, the total number of bachelor's degrees awarded to blacks has increased; however, the number of bachelor's degrees awarded increased by only 21 percent in biological sciences and 1 percent in engineering and declined by 14 percent in mathematics and statistics and 1 percent in physical sciences (National Science Foundation, 2010).

The Chelsea project ‐ A grant of £45,580 has been made jointly by the Engineering Industry Training Board and the Leverhulme Trust to sponsor a four‐year research project (1971–1975) to investigate the relevance of school learning experience to performance and attitudes of young trainees who enter employment directly from school. The project offers a relatively rare opportunity for practical co‐operation between education and industry in this country. The investigation will be directed by Dr Erica Glynn and will be based at the Centre for Science Education, Chelsea College, University of London, which is closely associated with curriculum development and other innovations in schools and universities.

Abstract

Purpose

This chapter uses Goffman’s concept of total institutions in a comparative case study approach to explore the role of psychotropic drugs in the process of transinstitutionalization.

Methodology/approach

This chapter interprets psychotropic drug use across four institutionalized contexts in the United States: the active-duty U.S. military, nursing homes and long-term care facilities, state and federal prisons, and the child welfare system.

Findings

This chapter documents a major unintended consequence of transinstitutionalization – the questionable distribution of psychotropics among vulnerable populations. The patterns of psychotropic use we synthesize suggest that total institutions are engaging in ethically and medically questionable practices and that psychotropics are being used to serve the bureaucratic imperatives for social control in the era of transinstitutionalization.

Practical implications

Psychotropic prescribing practices require close surveillance and increased scrutiny in institutional settings in the United States. The flows of mentally ill people through a vast network of total institutions raises questions about the wisdom and unintended consequences of psychotropic distribution to vulnerable populations, despite health policy makers’ efforts regulating their distribution. Medical sociologists must examine trans-institutional power arrangements that converge around the mental health of vulnerable groups.

Originality/value

This is the first synthesis and interpretive review of psychotropic use patterns across institutional systems in the United States. This chapter will be of value to medical sociologists, mental health professionals and administrators, pharmacologists, health system pharmacists, and sociological theorists.

Abstract

Work-life flexibility policies (e.g., flextime, telework, part-time, right-to-disconnect, and leaves) are increasingly important to employers as productivity and well-being strategies. However, policies have not lived up to their potential. In this chapter, the authors argue for increased research attention to implementation and work-life intersectionality considerations influencing effectiveness. Drawing on a typology that conceptualizes flexibility policies as offering employees control across five dimensions of the work role boundary (temporal, spatial, size, permeability, and continuity), the authors develop a model identifying the multilevel moderators and mechanisms of boundary control shaping relationships between using flexibility and work and home performance. Next, the authors review this model with an intersectional lens. The authors direct scholars’ attention to growing workforce diversity and increased variation in flexibility policy experiences, particularly for individuals with higher work-life intersectionality, which is defined as having multiple intersecting identities (e.g., gender, caregiving, and race), that are stigmatized, and link to having less access to and/or benefits from societal resources to support managing the work-life interface in a social context. Such an intersectional focus would address the important need to shift work-life and flexibility research from variable to person-centered approaches. The authors identify six research considerations on work-life intersectionality in order to illuminate how traditionally assumed work-life relationships need to be revisited to address growing variation in: access, needs, and preferences for work-life flexibility; work and nonwork experiences; and benefits from using flexibility policies. The authors hope that this chapter will spur a conversation on how the work-life interface and flexibility policy processes and outcomes may increasingly differ for individuals with higher work-life intersectionality compared to those with lower work-life intersectionality in the context of organizational and social systems that may perpetuate growing work-life and job inequality.
